Cowboy Caviar using Oregon Trail Candy or Candied Jalapeños
Makes a big bowl
Ingredients
11 ounce can sweet corn, drained
1 can black beans, drained and rinsed
1 small red onion diced or 1 bunch green onions diced, white parts only
1 lb cherry tomatoes quartered or romas seeded and diced1 cup cilantro chopped
½ cup (or more to taste) candied jalapeños or Oregon trail candy
¼ cup jalapeno brine
½ cup avocado oil
Lime juice to taste
Salt and pepper to taste
If you’re feeling fancy, add 1 avocado, diced
Instructions
Combine all ingredients in a serving bowl and allow to chill prior to serving.
Serve alongside tortilla chips or as an accompaniment to any Mexican faire.
