Vegan Queso Dip using 3-Pepper Relish

Ingredients

1 ½ cup raw cashews- soaked

¼ cup nutritional yeast

1 tsp salt and pepper

½ tsp cumin

1 tsp onion powder

¼ cup 3-Pepper Relish

½ cup salsa

1/3-1/2 half cup water (you can use water from soaked cashews) to thin

Instructions

  1. Place cashews in a bowl and pour bowling water over nuts. Allow to sit for 20-30 minutes.

  2. Drain water from cashews- you can reserve this water for thinning the mix in the blender or just use fresh water.

  3. Put cashews in the blender.

  4. Add remaining ingredients including 1/3 cup water.

  5. Turn your blender on and blend until completely smooth, adding more water as needed to meet desired consistency. You may have to turn off and move ingredients around in the beginning to make sure they blend well. Blend until silky smooth.

 

Serve with tortilla chips and veggies as a healthy appetizer.
